Phant's Favorite Cajun Recipes



Pepper Jelly


Ingredients:
1 2/3 cups red or green peppers, (jalepenos or a combination of bell peppers and jalepeno work well depending on how hot you like it.)
6 1/2 cups sugar
1 1/2 cups cider vinegar
1 bottle Certo
6 half pint mason jars w/lids

Instructions:
Wear rubber gloves and don't rub your eyes. Wash peppers and remove stems. Remove seeds if you want..(i don't, usually). Grind or chop really fine. Mix peppers with sugar and vinegar and bring to a boil. Cook for five to seven minutes. Remove from heat. Stir in Certo. Pour into sterilized jars and turn upside down to seal. Allow to set over-night before serving. Just dump a jar over a block of cream cheese and serve with Waverly crackers as an appetizer or snack. A Cajun Christmas traditon.**note--it may take playing with a couple of batches for you to get the right level of "hot" in your jelly. I recommend that if you are not Cajun, you start with 1/2 bell and 1/2 jalepeno peppers.



Pecan Pie

Ingredients:
1 unbaked deep pie shell
3 eggs
1 cup sugar
1/2 cup light corn syrup
1/2 cup dark corn syrup (or cane syrup)
1 tsp. vanilla
3 tbl. butter or margarine, softened
1 1/2 cups pecan halves

Instructions:
Preheat oven to 350. Prick bottom and sides of pie crust with a fork. Beat eggs slightly in a large bowl. Add sugar, syrups, butter, and vanilla and mix well. Sitr in the pecan halves and pour into the pie crust. Bake for about 50 minutes until a butter knife comes out clean when inserted into the pie toward the center. Cool before serving. Tres bien, Cher.


Crawfish Etouffee


Ingredients:
1 lb. peeled crawfish tails with fat
1 can cream of mushroom soup
1 small can Ro-tel tomatoes
1 diced onion
1/2 bell pepper, chopped finely
6 green onions, chopped
1 stick butter or margarine

Instructions:
Melt butter in saucepan. Add onion and bell pepper and saute on medium heat until soft. And tomatoes and cook until most of the liquid is absorbed. Add mushroom soup, stir until well blended and bring to a boil stirring constantly. Stir in crawfish tails and fat and green onions. Return to boil and simmer for five minutes, stirring frequently. Correct the seasoning to taste. Serve over cooked rice. So good it'll make you slap yo' mama!
